Because we don't want to confuse consumers. Until now we used the brand QUESOS EL PASTOR For all our products, as our catalog is so extensive, we generated confusion among some families of cheeses.

The San Ruffino brand encompasses products made with 100% raw sheep milk. It is also protected by the quality mark Queso Castellano which in the coming months will become recognized as a PGI by the EU, it also has the guarantee mark Land of Taste.

Our cured sheep cheese It contains in its elaboration the tradition of the sheep cheese of all life. Made with raw sheep's milk it has an unmistakable flavor.

  • Maturation: 150 days (+/- 30 days).
  • Characteristics: Ivory-yellowish color. Pressed and firm paste, with small eyes unevenly distributed. Warm and pleasant smell.

Quesos El Pastor - sheep castellano cured san ruffino 3kg

El reserve sheep cheese (old), made with raw sheep's milk and with a nine-month cure, is strong in flavor and with some eye on its texture.

  • Maturation: 225 days (+/- 45 days).
  • Characteristics: Very pleasant notes of sheep's milk. In the mouth it has a buttery texture despite its long maturation, being friendly and powerful in flavor.

Our Gran Reserva raw milk cheese (aged)Due to its long maturation period, it is ideal for the most demanding palates with deep flavors and pronounced aromas.

  • Maturation: 330 days (+/- 45 days).
  • Characteristics: Ivory yellow internal color, strong odor characteristic of sheep cheese. Taste highly developed, spicy and persistent. Compact, forceful and enveloping texture.

For lovers of strong cheese, which in its aftertaste invites to repeat. He Special Reserve sheep cheese It is made with raw sheep's milk and is cured for 18 months, becoming "a culinary whim".

  • Maturation: 570 days (+/- 30 days).
  • Features: Yellowish color. Very intense, developed and persistent flavor. Hard, firm paste with some eyes.
