KITCHEN WITH THE SHEPHERD - MEXICAN QUESADILLAS

Quesadilla is a very typical Mexican dish that consists of a corn or wheat cake filled with multiple options and is usually accompanied with guacamole or pico de gallo.

INGREDIENTS FOR THE QUESADILLAS

  • 8 Mexican wheat tortillas
  • 1 Onion
  • 2 red peppers
  • 1 green pepper
  • 1 tomato
  • 100 grams of canned corn
  • 1 chili (if you like it spicy)
  • 100 grams of Slices of cheese (the variety of the cheese depends on the taste)
  • Pepper
  • Salt
  • Pickles (to taste)
  • 50 milliliters of extra virgin olive oil

 

DEVELOPMENT

Preheat the oven to 180 ºC.

Clean and cut into thin strips the onion, peppers and tomato.

Drain the corn.

Sauté the vegetables in a pan with a bottom of oil.

When they are tender, season with salt and pepper and add a chopped chili. Incorporate the corn, mix and remove from the heat.

Place the pancakes on a baking sheet.

Spread the vegetables over half the pancake, cover with the cheese slices, add chopped gherkin to taste and fold.

Heat in the oven until the cheese is melted.

Serve accompanied with pico de gallo or guacamole if desired.
