Denomination of origin "Cheese Zamorano"

The union of the Spanish cheese factories of the Zamora province and, in turn, in the dairy farms of Zamora of the Churra and Castellana breeds of sheep, have made possible the obtaining of the Denomination of Origin for Zamorano sheep’s cheese. Hijos de Salvador Rodríguez S.A. (Cheeses El Pastor) are an active part of this group, being the largest producer of Zamorano cheese.

The objective of this association of Spanish cheese factories and dairy farms has always been to offer a high quality product which clearly distinguishes itself from other, perhaps better-known, Spanish cheeses.

Thanks to the transformation of a first class raw ingredient – the milk of the Churra and Castellana sheep – a Spanish cheese is obtained of unique flavour, an unforgettable texture and excellent quality.

These factors allow Zamorano cheese to compete with other national cheeses, and even beyond our borders.

Without doubt, the environment has always been part of the set of factors which make Zamorano cheese different. The plains of Zamora, principally planted with cereals, and the continental climate of the area, with its extreme changes of season, instil a strong character in its people, its animals and, of course, its cheese: Zamorano Cheese.
