Zamorano Cheese burst onto the markets in May 1993, the date when it obtained the Designation of Origin mark, which guarantees its special character and, of course, its quality.
Made from unpasteurized sheep’s milk our Designation of Origin “Zamorano Cheese” is the result of the combination of our two native breeds of sheep: the Churra and the Castellana.
This is an aged sheep cheese, made with the greatest care and dedication throughout the process, followed by almost a year of maturation, which converts it into a special, select and unique cheese. A cheese of intense aroma and flavour.

RAW INGREDIENTS
A base of unpasteurised Churra and Castellana sheep’s milk, salt, rennet, and preservative E-1105 (derived from egg).
CHARACTERISTICS (TEXTURE, FLAVOUR, SMELL)
Texture: hard, firm and with some ‘eyes’ of marbled yellow colour. Characteristic strong smell of sheep’s cheese. Flavour: well developed, sharp and long-lasting. Aroma: intense with a saltiness.
